U Portugalu me zovu bacalhau, a usoljeni bakalar uobičajeno je jelo u cijeloj zemlji. Portugalci me na taj način pripremaju od 1497. kada su prvi put stigli u Sjevernu Ameriku. Soljenjem bakalara riješili su ozbiljan problem morskih ekspedicija: konzerviranje hrane tijekom putovanja.
